I have finally returned to the land of food blogging. I took a nice long break for a lot of different personal reasons, but I am so ready to be back. I have lovely pictures of tonight’s dinner and a few fun announcements.

A salad of mixed greens, homemade dressing, and toasted almonds! Mmmm. Toasted almonds are SO good.

And here we have tomatoes, cucumbers, feta, a hunk of baguette, and a bunch of grapes! This was such a satisfying dinner. It was light, but very balanced and filling.
Now for the announcements! I have three of them and I’ll save the best for last.
1. The lovely Miss Eating Bender has inspired me to make an effort to cut sugar from my everyday eats. This is a challenge for me because I prefer sweet to savory most of the time. I’m not going to cut back drastically, but I’m going to start looking for ways to reduce my intake. I’m hoping this will help my skin and energy levels. We’ll see what happens!
2. I’m also going to make an effort to eat fewer protein bars. I love them and they’re great in a pinch, but I eat WAY too many of them and they’re just not as filling as real food. We’ll have to see how well I handle this challenge as well.
3. This is definitely going to be the greatest challenge. On August 16th, I am going to be running a half marathon. This is crazy big news because I used to run regularly… back in September. I ran all Spring and Summer, but I didn’t cross train, pushed myself too far distance-wise, and started hating it. I didn’t start running again until the end of February. I mapped out a tentative training plan and I should be fine. I’m keeping my weekly mileage relatively low because my long runs are going to start increasing pretty quickly mileage-wise. I have a few 10Ks scattered between April and August, and I’ll be sure to keep you all posted on how those go. My first race is the Rush 10K on April 11th. I’m very excited! To the runners out there, I would love any advice you have for me. I’m a little bit worried about going from 5 mile runs to 13 mile runs in 5 months, but I know I can do it.
Now I’m off to study for a Calc test on Thursday. Have a lovely evening!
